    Bin 2 Shiraz Mataro is a classic Penfolds wine, steeped in nineteenth-century tradition. Typically it is a generous medium-bodied wine based on shiraz, but shot with the aromatics and muscular strength of mataro. It’s best to drink early, but like many of Penfolds reds can last the distance in the cellar.

    Interest in Bin 2 has grown as the popularity of traditional Rhône varieties and blends continues to flourish.

    At first the tannin structure is grainy, and becomes powder-like in texture upon sitting in the glass…
    Hungarian paprika, pomegranate and berry coulis abound.
    French and American oak each offer support … contributing to the spice spectrum, binding the palate and ensuring compliant tannins.

    Bin 389 was often referred to as “Baby Grange”, in part because components of the wine are matured in the same barrels that held the previous vintage of Grange.

    On the nose, cola, grated chocolate and cappuccino dust bind with juniper and spices. A flash of brown sugar and liquorice – not quite in the Marsala spectrum – instead, brandy impressions replaced by blood orange-rind. Oak somewhat partially hidden, yet faint scents of cedar and graphite lobby for further bottle maturation.

    On the palate, expect liquorice, stewed plum and blackcurrant, with dark chocolate and mocha in the background. Savoury and salivating – mouth-watering, succulent acidity. This acidity interplays with integrated tannins – coating the mouth and adding length.

    Penfolds Max’s Shiraz Cabernet is a tribute to former Chief Winemaker Max Schubert 1948-1975, a legend in Penfolds history. Max’s constant pursuit of excellence paved the way for those who followed in his footsteps and also allowed the status and heritage of Penfolds Winery to grow.

    Plum core with strawberry brightness at the rim.
    Notes of graphite and heady varnish to the fore. A distinctive blue-fruited elegance and gorgeous cranberry sweetnes. An aromatic kaleidoscope of vanilla sponge, cannoli creaminess, asphalt, wet slate, juniper and pink peppercorn.
    On the palate, a salinity – perhaps best described as salted plum. Coolness/flowing texture. Spearmint tea (fresh leaves) and lavender. Graphite from the nose continues as a theme on the palate, Black olive tapenade. Ylang Ylang, powdery-style tannins that are tapered on the palate. All clearly converging to a well-defined point.
