Shiso
Shiso is the present common name fore the Asian culinary herb, seed(spice), and the entirety of the Preilla frutescens plant, which belings to the mint family. The whole leaf of green shiso is often used as a receptacle to hold wasabi or various garnishes on a sushi plate. Shiso bitters are prepared using carefully selected blue shiso from the longstanding Aoba plantation, which grows the highest quality of shiso in Chiba Prefecture. Chiba Prefecture is also the heart of Japanese Bitter production.
Yuzu
The Yuzu is a citrus fruit and plant originating in Southern Japan. It is believed to be a hybrid of sour mandarin and Ichang papeda. This fruit resembles a very small frapefruit with uneven skin texture and can be either yellow or green depending on the degree of ripeness. Yuzu fruits, which are very aromatic, typically ranging from 5.5 and 7.5 cm in diameter. However, some can be as large as a grapefruit. Yuzu bitters are purchased directly from the farmers in Tokushima prefecture, where it is known as the yuzu production district. Yuzu bitters are made with fresh and fragrant Citrus junos.
Umami
Umami,a savory taste,is one of the five basic tastes(together with sweet,sour,bitter and salty). A loanword from the Japanese umami,umami can be translated as “pleasant savory taste”.This particular writing was chosen by Professor Kikunae Ikeda from umai “delicious” and mi “taste”. The kanji 旨味 are used for a more general sense of a food as delicious. Umami Bitters is Carefully selected high quality materials from all over Japan from kelp, bonito flakes, and dried shiitake mushrooms, which contain the most UMAMI components. Hinoki
Hinoki, also known as rattan, which is a traditional lumber used to construct temples in Japan, will be the upcoming flavor for the new Japanese Bitters. About a year ago, we successfully created the bitters prototype by extracting the aroma and flavor of the aroma with the maximum value through multiple trial and error. The aroma of rattan has been shown to have a positive effect on the body, such as acting on the parasympathetic nerves of the autonomic nervous system, promoting the generation of alpha waves in the brain, normalizing breathing and eliminating insomnia, etc. Hinoki bitters is Pure 100% persimmons, that lives in the environment, are used with blessing from the nature of Tama (known as a forestry site in Tokyo), extracted carefully by low temperture vacuum extraction method together with domestic alcohol and water.
Sakura
Sakura is the Japanese term for cherry blossom trees. Cherry blossom trees are different from other cherry trees. The main difference is that cherry blossom trees don’t produce fruit. Instead, they bloom with beautiful pink or white flowers each spring. Cherry blossom trees are an icon of Japan. Some people even call the cherry blossom Japan’s informal national flower. Sakura, the key ingredient, is a blend of natural cherry petals and leaves. We carefully select only those that are both grown naturally without pesticides. ・The variety of cherry blossoms is Yae Sakura(Sekiyama Sakura) which blooms in southern area of Nagano prefecture ・Sakura leaves are the leaves from Yae cherry blossoms, which blooms in Izu, pickled with the natural salt from the ocean.
