    Max’s Cabernet Sauvignon displays the Penfolds ‘stamp’ inspired by Max Schubert.
    The aromatic enticement is rewarded from the first sip. Ripe raspberry, bramble
    black currant and blood plum flesh out the fruit spectrum. Oak derived cassia bark and dark liquorice notes temper the gorgeous fruits.
    Taught, lingering tannins create texture and definition.

    Stone fruits persist amid a pistachio nougat-like creaminess, more than likely derived from extended time on yeast lees.
    Up-front oak tannins and long, lingering acidity combine to create an enticing phenolic ‘grip’, enhancing the overall structure of the palate.

    Energetic red fruits wrapped around a steely spine.
    Aromatics belie the wines regional composition. Ripeness has been swapped for pink peppercorn, white plum and the complexities of fresh Thai mint – more reminiscent of cool climate pockets around the world. Red mulberry and white chocolate offer sweetness.

    Palate:
    Raspberry and white chocolate generosity persists on the palate.
    Tannins appear effortless and enmeshed within fruit, namely white cherry and rhubarb.
    Oak sits in the background and layered behind crunchy acidity.

    Nose: The nose shows rich concentration of black and blue fruits, ripe blackberries, dark chocolate and rich mocha note. Hints of spice and integrated oak.

    Palate: The palate is rich and plush with good structure. There are concentrated layers of blackberry, plum and blueberry fruits with soft layers of tannins to give length and finesse while finishing soft and full of flavour.

    Nose:
    Full-flavoured, endowed with a concentrated fruit spectrum of citrus, grapefruit and white peach.
    Hints of sherbet, camomile and goats cheese complex the aromatic offer – a chardonnay cast assembled from three States of Australia.
    Certainly, there’s quite the performance happening in the glass, with barely a swirl of the glass and some air required to light up the stage!

    Palate:
    First and foremost, this wine extolls freshness, yet not at the expense of an endearing richness and generosity of flavour.
    Whilst some may perceive it to be slightly ‘larger-framed’ than in previous years it nevertheless retains trademark Bin 311 mineral acidity and linearity. Rockmelon and white peach fruits are pronounced. Underlying sherbet and fresh lemon tart impressions coupled with a lovely creaminess add to the structural and flavour pool.
    A trademark Penfolds phenolic grip certainly doesn’t curtail length or volume.
